A Crockpot Recipe and a Bonus

Having been housebound for three days it only seemed right to dig out the Crockpot for some good ole comfort food.  I can’t even think in my lifetime when I have chosen to stay in the house for three days.  Our weather is just that bad.  We are in the midst of deep snow, ice, blowing snow and sub zero temps.  Accidents are shown on TV with each and every news report.  What better time to stay indoors and organize than early January in the midst of an arctic blast?

Many of you may have a recipe for White Lighting Soup or White Chili but we really, really like this recipe so I thought I would share.

Simple ingredients and good for you too!

White Lightning Chili

4 cans of North White Beans, drained

2 cans Chicken Broth

4 chicken breasts

1 onion, diced

1 can Rotel tomatoes

3/4 block monterey jack cheese, grated

1/4 t. garlic powder

1/4 t. chili powder

Salt & Pepper to taste

Dice and brown chicken with diced onions.  Add all ingredients to crockpot.  Cook on low all day.  Leave 1/4 block jack cheese for topping.  Makes a full crockpot.

*I did not have a block of jack cheese, but I had slices of monterey pepper jack.  I just improvised by tearing some slices into the mixture.  I added a bit more just before serving.

Now for your Bonus!

During my Christmas Silk Show I always serve food .  My sister said she would bring a couple of appetizers to help me out.  She is a great cook with many good recipes so I love it when she offers to help out.  She happened to be short on time and told me she hoped I would be okay with what she brought.

This was it!

You have no idea how very good this is until you try it!  Many, many ladies at my show asked for the “recipe”! :)  Then again on New Year’s Eve short on time I decided to pull out a package of this I had purchased and got the same reviews.  Each family member asked for the recipe!  This is a hot dip that only requires a can of artichokes, some mayo and mozzarella cheese. 

It’s Fantastic!

 

 

 

This is another variation from Good Seasons.  It is almost as good and very much enjoyed too.  This is a cold dip.  From now on this will be a staple in my pantry when I'm in a pinch for time.

Hi Donna, this looks delicious. Mr. P would love this,or so I think. He's pretty picky about what he eats now, didn't use to be. So cooking has become quite the challenge. Isn't this weather something else? We're below zero here, with snow. Guess the a.m. hours are suppose to be far worse. I've even had to close the shop, not many can get back the 1/8 mile lane. It's been cleared out,but very very slick. How are things with you? Drop by when you can and let me know...hugs ~lynne~

Your soup looks terrific. So warm and hearty. We have been pretty much housebound too.

I'll have to look for those mixes. Sometimes you just have to cut some steps to save time :)

Don't dish up my bowl quite yet; it will take me a while to get there....that looks fabulous, as do the other mixes! I'll keep my eyes open for those.....yummo!

ohhhh, I always love quick and easy dips that taste good. thanks for the heads up, I'll look for those next time I'm in the grocery store. Your soup looks great...we just had white chicken chili last night! great minds think alike!

Thanks for the chili recipe...it sounds fabulous and I love an easy crock pot meal. Also love the tip about how good the artichoke dip is. I'm going to go look for that at the store.

I love to pull out the crockpot in the winter. When I come home and get a whif of a delicious smell of something that has been coking in it all day, it is just a satisfying feeling. I'll be trying your recipe. Stay inside and stay safe! laurie

Oh my, I cannot imagine the weather you must be having! Here in Texas, this artic blast is anything but fun ~ low temps and even lower wind chills. :-( I do have to say though that yesterday and today we've had sunshine...even through the bitterly cold winds. Thanks for the recipe...love white chicken chili/soup! Thank you for sharing the 2 mixes also.

I have seen those dip mixes but haven't tried them yet but will soon (after my diet...ugh). I love white chili but haven't had it yet this cold season but seeing your blog made me run to the pantry to see if I had any Northern Beans...yep I do so guess what we will be having this weekend? And yes, it's very good for you too. xo (I love Chicago...don't you?)

Oh YUM....thanks for the information on the dips I'm sure Len would love those to death...Girl its so funny I was thinking about you today as I was washing my silks in the bath tub...were your ears burning ha ha!! and don't you just love the smells that come from the crock pot all day when its cold out...Now last week I did a pot of white beans and ham YUM my house smelled wonderful...oh until after we ate them ha ha!! need I say more...no matches allowed in my house after the beans ha ha!! May you have a warm and safe weekend my friend...Oh and I haven't been out since last Friday...I only go to town once a week to do everything I have to do...I'm a real stay at home person after running my own buisness for 31 years I don't care to ever leave my mountain top...Hugs and smiles Gl♥ria

Hi Donna, this sounds wonderful! My hubby loves chili... in fact, he made deer chili last week. It would be good without the deer! lol...I've been indoors lately too, it was 16 degrees here today. We are not used to that kind of weather. Have a good weekend! Kristen

Hi Donna, I finally got over to visit- your lightning chili looks so good. My beans were good and went so well with some homemade bread. It is still cold here, so had a bowl for lunch about an hour ago. I checked our your faux candles- I bought some when they were first introduced about 5 or 6 years ago at the design market. No one had them and I was so proud of myself to be one of the first to have them before they got retailed in the stores. Now they can be found everywhere. I didn't know they had remote ones, though. Those are too cool!! And you got them at Target? I will have to look for them. I wish the batteries lasted longer- that can get expensive. LOL

Donna the white chili looks amazing and soooo healthy! Alex would love this one. I'll make it for him soon and let you know how it turned out.

I have been organizing and cleaning like crazy here too. We dropped off three bags of clothes to Goodwill today and I know I will have even more soon.
